The only thing I ask is that you're passionate about cooking. I'll share with you some stories, especially from my scouting and exploration of the state of Oaxaca, mainly from La Mixteca and the Central Valley regions. Finally, we all are going to enjoy the meals we cooked, I'll show you a couple of techniques to make your food look fantastic with little effort (food love starts with the sight!) Mexican food, thus, Oaxacan cuisine has a significant foundation on corn, so we are going to learn about this cornerstone ingredient of the local gastronomy. One important topic that will be covered it's the Nixtamal process, which is the cornerstone of Mexican gastronomy and culture.

If you visit Oaxaca, you must visit Hierve el Agua. Hierve el Agua is a natural scenery of petrified waterfalls. The first thing we do on the tour is to go directly to Hierve el Agua as our first stop. We stay there for 3 hours to have enough time to enjoy the natural wonders of Hierve el Agua without rushing. There you can go hiking with local guides, or enjoy the spas that are there. After visiting this wonderful place, on the way back to the city we visit one of the most popular mezcal distilleries in Oaxaca. There you can do a mezcal tasting completely free of charge, and taste the different flavors of mezcals that exist. The tour lasts approximately 7 hours, and includes entrance fees to Hierve el Agua

At home away from the city in a small town, our outdoor wood stove is the best place to cook. The Real Traditional Oaxaca Cooking class
hello every one! im chef Miguel Alvarez. After several years cooking fine dinning and living in scandinavia for some years my mind was changed.. so, I decided to go back to roots and create "The Real Oaxaca Cooking Experience" at Quinta Brava, this project tries to recover and pass the knowledge and the heritage from the real ancient Oaxaca cuisine and the magic with it, also, to show you the ancient methods and utensils that our older relatives used to use, we will cook a nice bunch of recipes form all over Oaxaca in a old fashioned wood stove called "Lorena" cause the way how is been constructed ( in Spanish "lodo y arena" in English "mud and sand") and you will be the main chef of this culinary experince, you will cook everything with your hands

We adapt to your needs, in Hierve el Agua you will have the option of hiking (with or without a guide belonging to the community where Hierve el Agua is located) this activity can be done perfectly without a guide because there are signs that tell you where to go. Go, you will also have the opportunity to cool off in the natural pools, or you can skip the hiking if you wish, all of this is optional. Our meeting point is at the entrance of the ethnobotanical garden, just behind the well-known Santo Domingo church. The Mezcal Journey
Our experience is an educational tour to learn about the culture of mezcal and all the tradition that surrounds it. We will begin our trip starting from the center of the city of Oaxaca and we will visit the towns of Mitla and Matatlán. There we will take a walking tour through our majestic agave fields with thousands of specimens, where we will be able to learn more about this plant, as well as having enough time to do a couple of activities and of course the best photographs. Then we will continue to an artisan mezcal distillery to learn step by step, the entire artisan process of making our drink. At the end of the tour, we will have an unlimited tasting of different varieties of mezcal. Finally, we will share a traditional Oaxacan meal at a local restaurant, already included, and of course, More Mezcal!
